RED CURRY WITH ROASTED DUCK


Ingredients 
(1) 1 large duck (along with the bones removed, cut into bite-size pieces). 
(2) 5 pieces of pineapple (cut into small bits). 
(3) 4 kaffir lime leaves (roughly SOI). 
(4) 1 teaspoon sugar 
(5) 2 coconut 1/2 cup. 
(6) Small 8-ball tomatoes 
(7) Salt 1/2 tsp. 
(8) 2 tablespoons fish sauce 
(9) Water 1/2 cup (or chicken broth). 
(10) Vegetable oil 1 1/2 tbsp. 
(11) 3 tablespoons red curry paste


How to do step by step
1. Heat oil in a pan until hot. Add curry paste and stir Then add coconut 3/4 cup and stir well. ( Coconut water, generous left it on for use in the next step ) , fried with spices and coconut together throughout .

2. Put the shredded duck meat already . And while over Then pour the move to a bigger pot . Bring a large pot to a boil and add the remaining coconut , water ( or chicken broth ), tomatoes , pineapple, kaffir lime leaves , sugar , salt and fish sauce.

3. Those ingredients in a pot and mix well. And wait until boiling, then remove from heat. Serve the dip bowl and with steamed rice.

FRIED CHICKEN WITH BASIL LEAVES



Ingredients 
(1) 450 grams Chicken (cut into pieces small enough Dim words). 
(2) 5 cloves garlic (mince). 
(3) Onion 1/2 cup (cut into thin slices). 
(4) 2 tablespoons vegetable oil 
(5) Dark soy sauce 2 tsp. 
(6) 2 tablespoons fish sauce 
(7) 1 cup basil leaves 
(8) Pepper 7 tablets (crushed and chopped). 
(9) Ground pepper 

Note: You can add other vegetables, such as stir fry with carrots, pea pods, baby corn, etc..

How to do step by step
1. Heat oil in a wok until hot. Then add the garlic and onion and stir- fry for 5-10 seconds for the next few minutes until fragrant odor . Add chicken and stir-fry until the chicken is cooked throughout.

2. Put black pepper and soy sauce to the pan and stir for another 15-20 seconds.

3. Season with fish sauce And put the basil leaves into the pan . Turn off the light , then stir until the basil mixed with chicken served in a plate garnished with pepper before . Grove served with steamed rice Sometimes omelet or fried eggs are often served in conjunction with.
